Vegetarian Fried Bee Hoon

Fine rice vermicelli is wok-fried with golden tofu, shiitake mushrooms, cabbage, carrots, bean sprouts and fresh chives. A light soy seasoning keeps the dish savoury while allowing the vegetables and mushrooms to remain distinct.
